Easy homemade Ratatouille

I absolutely love Ratatouille. And I have watched the movies a zillion times with my bestie’s girls.

Whenever I watch this cartoon, I want to cook a ratatouille as delicious and as beautiful. Anyway, here is my home-cooked everyday ratatouille.

Despite my obvious enthusiasm and my previous efforts at the Agneau à la cuillère, the Bar en croûte de sel, the Poulet basquaise and the Pot au Feu,  I still feel obliged to remind you that I am not a seasoned (or qualified) chef… Yet! So the recipes I am showing you are candid demonstrations from a girl with no culinary school background and limited tools. These recipes are not Fondamentally’s, they are traditional, home cooked cuisine!  That said, when I cook these recipes, they meet with the approval of the people I care about – or perhaps they care about me enough to say so.

Ingredients for 4-6 people :

  • 2 aubergines
  • 2 courgettes or zucchinis
  • 2 peppers, red, green or yellow
  • bouquet garni
  • cooking salt
  • 1 onion
  • 4 tomatoes
  • 2 cloves of garlic
  • and olives, as many as you love
  • Salt and Pepper to taste

Some people peel the vegetables. If I had guests over, I would make the effort but this is to me a go-to vegetable dish and I do not peel the vegetables. But I cut them in bite-size chunks.

I sauté the vegetables and then I let them cook gently for 45 minutes with some thyme. Salt and pepper if needed.
