Easy homemade Poulet basquaise – Chicken Basque style

Bonjour! After my first recipe post and the second, a rendition of the Bar en croûte de sel, I am still not a seasoned chef… Yet! So the recipes I am showing you are still candid demonstrations of a girl with no culinary school background and limited tools. These recipes are not Fondamentally’s, they are traditional, home cooked cuisine !
This is a very simple dish that does not require any skill. There are as many recipes of poulets basquaises as there are households in France. Rumor has it that it was initially a vegetable sauce eaten with bread from the East side of the Pays Basque (south of France). On the beachside, fish would replace the chicken.
I would recommand Poulet Basquaise because it brings the South of France’s warmth and sunshine into the kitchen and on the table. And my last sun kissing posts are about the south of France : check this and that. Granted, this bird comes from the South West of France and not the South East, but it is still the south, isn’t it?
Ingredients for 4-6 people  :
– 1 chicken
– 1 kg of tomatoes
– 700 g of peppers (green, red, yellow – the more color the more joyful)
– 3 minced onions
– 3 garlics
– 1 glass of white wine
– 1 bouquet garni (or some thyme), olive oil, olives, pepper and salt

In a cocotte or in a large pot, brown the peppers cut into julienne (or stripes), and the minced onions with the garlic. Then add the tomatoes and the bouquet garni or the thyme.

Meanwhile, season the chicken with salt and pepper and then brown it,  and then…

… put the chicken with the vegetables. Put the olives and cook for 10 minutes. When the liquid is reduced, pour in the wine. Cover the pot and cook for the rest of the hour.

Ta-da! You may add chili. The Basques usually stir in piment de cayenne but I did not have any in the kitchen. Note to self : complete the pantry.

You can then eat the chicken with rice. When I improve my cooking skills, I  may be able to cook riz pilaf.
